Set against the beautiful backdrop of our woodland basecamp, this course celebrates the simple pleasure of preparing and sharing good food around the campfire. You’ll explore time-honoured methods of cooking in the wild, using cast iron, hot smoking, baking, and earth ovens, as well as learning how to manage a fire for a range of cooking tasks. Led by experienced outdoor educator James Kendall, you’ll spend the day learning hands-on skills that transform humble ingredients into delicious campfire feasts. From baking bread over the flames to roasting meat in a ground oven, this course is a journey into the flavours, aromas, and community spirit of woodland cookery. This course is perfect for anyone who wants to deepen their outdoor living skills, from bushcraft enthusiasts to food lovers looking to explore the art of cooking in nature’s kitchen.

This hands-on introductory course invites you to explore the subtle signs, clues and stories left behind by the creatures who share our woodland. Under the expert guidance of guest tutor Pete Morton ofRed Oaks Bushcraft, you’ll learn how to recognise and interpret footprints, gait patterns and the many other traces animals leave in their wake. From paw prints to feeding sign, hair fibres and scat, you’ll build a foundation in understanding who has passed by, when, and what they were doing. As you work through the landscape, you’ll develop your awareness and sharpen your senses, learning to use sight, sound and even smell to tune into your environment.

Wild Game Preparation & Outdoor Cookery

The day will be very much hands on and the course will culminate in you enjoying a freshly cooked game casserole which celebrates the wild animals of the day. On this course we will take you through the process of identifying if your game is fit for consumption, how to prepare each animal for cooking and use some of the cuts to create simple but hearty campfire meals. We will also discuss the history and uses of the various non meat parts of the animal and talk about the processes our ancestors would have employed to make as much use of the animal as possible. This one day course will give you a solid grounding in using wild game in your cooking, all against the backdrop of the mixed woodland at Park in the Past. Your special guest tutor for this course is bushcraft instructor Pete Morton of Red Oaks Bushcraft.
