On this Asado BBQ course, join Rupert (and guests!) as he takes students on an Argentinian grilling odyssey. Lighting fires and grilling meat is a way of life in Argentina from the Glaciers of Tierra del Fuego to the northern peaks of the Andes. The antithesis of South American BBQ, Asado, is all about letting the flavour of the meat speak for itself. No spices, rubs or marinades are added before the meat is touched by the heat of the fire. Very slow cooking over hardwood embers creates the most smokey, succulent and flavoursome meat you will ever taste. Unique equipment is used, the same as you would see on the Pampas used by the Gauchos after a long day herding cattle, Parrilla (wood grill), Horno de Barro (wood oven), Asador Criollo (adjustable spit) to the most primal method Asador de la Cruz in which a whole beast is butterflied, fastened to an iron cross and cooked over an open fire. You will also learn the correct principles of fire building, management, temperature control and charcoal making. The day is all about fire and food…. but more importantly the hunger that inspires us to improvise and innovate. If there is wood to burn and local ingredients at hand, then we can find a way to make something delicious! The course includes plenty of refreshments with the red wine and beers flowing throughout the day! (soft drinks also available) to enjoy with your steaks, fish and a variety of other meats.

The simplest pleasure.. making bread! At Philleigh Way we can show you how easy and versatile it is. From the gorgeous farmhouse loaf to enriched doughs. We look at variations of dough and bread that can enhance any meal, big or small. Rupert and guest chefs will take you through the whole process and how the chemistry works in bread making, as well as a few culinary side dishes to prepare alongside your breads. The day is fun, informative and most of all you’ll go home with plenty of spoils from the days baking! Mexican Cooking

The basics of Mexican cuisine can be traced back to 7000 BCE, when Mexico and Central America had yet to be colonised. Mexican Cuisine is a nice blend of the indigenous and Spanish cuisine. It is still based in beans, corn, tortillas, and chill peppers, but these are now usually served with some sort of meat and cheese. Most dishes come with some sort of rice and spices as well, a clear nod to the European influence. Join us as we teach you everything you need to know about this creative, flavourful and stunning cuisine. Mexican food offers a vast array of spices, techniques, meats & breads, during the day your tutor will take you through some of the classic dishes as well as the popular “tex mex” style dishes that we all know and love. So whether you want to spice up your life or bring a little heat into the kitchen this is the course for you. Woodland Foraging at the Farm

With a mixture of open pasture, ancient oak woodland and views to the river estuary making Philleigh Way on Court Farm the perfect location to forage for edible plants and wild food. The course is fun and informative and run by the hugely knowledgeable Emma, Creator and owner of “Never mind the Burdocks”. (we love the name!!) After the foraging session, you will be welcomed back to the cookery school for a delicious lunch and refreshments. What Emma doesn’t know about foraging isn’t worth knowing, this unique, highly informative and great day out is sure to kick start any budding wild food lover. Course Overview Duration: 10:00-14:30 Max student to tutor ratio: 12/1 Tutor: Emma Gunn – Never mind the burdocks Welcome talk, orientation and safety briefing During this session we will cover the aim of the course, toilet facilities, course area and safety briefing. Foraging around Court Farm Located in an ideal environment for a foraging course in Cornwall, your group will be taken on a foraging excursion around Court Farm, where you will explore many different environments – including hedgerow, pasture and woodland. You will learn about the whole wild food larder dealing with herbs, roots, shoots, berries, flowers, nuts and fungus. At the end of the foraging course, you should be able to easily identify a minimum of 15 edible plants that you will be able to forage in your own time.
