Woodfired Cooking

This course opens up a world of possibilities on your barbecue, grill or local beach. As well as covering key skills such as lighting and temperature control, you’ll be learning how to cook killer meals on fire! Suitable for those who want to learn to cook food other than the standard barbecue fare, our woodfire course shows how to use a “lid-on” barbecue technique to grill, roast, smoke and bake! During the 4 1/2 hours you and your classmates will prepare a variety of different dishes under the guidance of Rupert and using many of the techniques he uses for events and feasts. Using a combination of charcoal and wood you’ll be taught skills from lighting techniques to controlling temperature and knowing when your food is perfectly cooked. Family Pizza Making Experience

At Philleigh Way, we love pizza and I mean love! Making pizza is a great alternative to simply eating at a restaurant – and this course gives families an unforgettable experience. You and your family can learn how to prepare and bake a pizza – from start to delicious finish! Starting with your pizza dough, you’re able to roll and shape it – and then add the fresh tomato sauce. And of course, it would not be complete without the all authentic local ingredients that you can choose to add to your unique pizza! You finally bake your edible masterpiece in a traditional wood oven. At this point kids are covered in white flour and tomato sauce, but it’s worthwhile when you all get to enjoy your delicious Italian-style pizza together. You will each get to take home your very own handmade dough to make more pizzas at home or freeze to use another day! Course Overview Duration: 11:00am – 1:30pm (including family lunch) Tutors: Rupert Cooper – Head tutor Welcome: Meet your tutor and see for yourself the Philleigh Way farmhouse cookery school and garden.
