From north to south, nearly every region has its own version of pasta , each one crafted to hold rich, flavourful fillings that celebrate local ingredients and heritage. Chef Carl will guide you step-by-step through making a tender, pliable dough, unveiling the secrets to achieving flawless pasta with the kneading and resting technique, and teach you how to shape these beautiful little pouches by hand — no special tools required. You'll also pick up some basic knife skills along the way. We'll explore classic fillings inspired by the best seasonal ingredients of the moment, and you'll make your own accompanying sauce that lets those fillings shine.
