Tony has been cooking professionally for over 30 years. He trained classically in French technique before taking on roles at the Balmoral Hotel, Skibo Castle, and the Royal Yacht Britannia, where he was head chef. He went on to open some of Edinburgh's most talked-about restaurants — Oloroso, Roti, and Tony's Table (which picked up a Michelin Bib Gourmand in its first year). On television he co-hosted BBC2's The Incredible Spice Men with Cyrus Todiwala, and is a regular on Great British Menu, Saturday Kitchen, and Ready Steady Cook.
